Thai Marinated Grilled Chicken with Sautéed Baby Bok Choy (Paleo). Wine paring included!

Nothing says summer like the BBQ and I absolutely crave this dish…A LOT. I love taking inspiration from ethnic cuisines and putting my own twist on it. This recipe is for two, but you can easily double the ingredients for more. I go heavy on the coconut milk in this actual video, but it would be plenty for three to four chicken breasts. I was going to make this with rice pancakes, but decided to make it Paleo because the chicken breasts were rather large. You can serve this entree with Jasmin rice if you please, and I promise I’ll share my rice pancake recipe soon!
