I have always been a fan of restaurants, ever since I was a little kid. For me, going out to eat was like going to an amusement park. My very first restaurant job was as a Bus Girl at the age of 16 in my favorite fine dining Italian restaurant. I continued working in various restaurants throughout my life and learned a ton about cooking, ingredients simply speak to me and recipes come naturally. I have an organic garden, but I don’t grow everything! I strive to purchase foods that are locally sourced and meats that are ethically raised.

I’m happy to share with you my recipes and wine pairings for you to try in your home kitchen! I am a surfer, so I do tend to cook meals that aren’t heavy. Check back here often!

Thai Marinated Grilled Chicken with Sautéed Baby Bok Choy (Paleo). Wine paring included! – Nothing says summer like the BBQ and I absolutely crave this dish…A LOT. I love taking inspiration from ethnic cuisines and putting my own twist on it. This recipe is for two, but you can easily double the ingredients for more. I go heavy on the coconut milk in this actual video, but it would be plenty for three to four chicken breasts. I was going to make this with rice pancakes, but decided to make it Paleo because the chicken breasts were rather large. You can serve this entree with Jasmin rice if you please, and I promise I’ll share my rice pancake recipe soon!

PAN SEARED SEA SCALLOPS IN A LEEK BUTTER SAUCE WITH SPIRALIZED VEGGIES – Traditionally I make this dish with linguini, but here I have decided to go paleo and use vegetable “noodles” instead. Products used can be found on the YouTube links.

FRESH PASTA PORK MARINARA & SPIRALIZED SWEET POTATO – Homemade fresh pasta is the absolute best. I say once you go fresh, you’ll never go back to boxed! You will fall in love with the texture and ease of making fresh pasta with the KitchenAid attachments. This recipe also includes grinding fresh meat with the KitchenAid Food Grinder and spiralized sweet potato with the KitchenAid Sprializer Attachment! ZUCCHINI LASAGNA – This recipe has been a major hit. It’s pretty simple to make and tastes AMAZING. A phenomenal recipe for those on a paleo diet, but anyone can enjoy this dish!
